Following on from Mtgnnr's mission to rot the teeth of the nation................
Coconut Ice
2 cups caster sugar
half cup of milk
50g butter plus extra for greasing
165g coconut, dessicated
2 or 3 drops red food colouring
*grease a 20cm square tin
*put sugar & milk into saucepan, slowly bring to boil
*reduce heat, simmer for 5 mins
*take off heat, stir in butter and coconut
*quickly pour half into greased tin
*quickly mix food colouring with rest left in saucepan
*carefully pour into tin and before set, cut into squares.
If you want to make this for a fete, put some into a nice cup & saucer, bag with cellophane and tie pretty gingham ribbon around the top.

help. when you say *cups*, do you mean teacups or the american cup measure?

Well I made it, using American cups for the sugar and milk. Blah! It was soooo sweet, I used to love Coconut ice but couldnt eat it now.
