    Hi there

A lot of chocolate brownies use apple sauce..to keep them moist and add sweetness....
    -6 -8 -3 -1.5 -2.5 -3 -1.5-3.5
  • I have seen a lot of low sugar recipes tend to use apple sauce as a substitute for sugar - sweet and moist too....

I haven't a specific recipe to recommend, but could be worth a hunt..
  • Nigella's fairfax granola - uses apple sauce and is tres yummy!

I used to have a recipe (from the 70's magazines 'Supercook') that was for a cake made with part wholemeal flour - so it was quite a 'substantial' cake. when putting the mixture in the cake tin, you only put half in at first and then a layer of cooked baking apples, followed by the remainder of the cake mixture. It was quite unusual but went down a treat at the time.

Have to admit to throwing that 'partly-collected series' out last November when I moved house - an attempt at decluttering my life!

Have just been googling and came up with this recipe which is VERY close to the one that I had:

    courtesy of Chris@rigdenage

    Apple cake

    4 oz margarine
    4 oz soft brown sugar
    2 eggs
    5 oz wholemeal flour
    1 1/2 tsp baking powder
    1-2 tsp mixed spice
    2-3 tbs milk
    4 oz raisins
    1 cooking apple, grated
Cream marg and sugar together. Beat in eggs, one at a time. Add dry ingredients, and raisins, and beat until smooth, adding a little milk if required.
Grease and line a 8"-9" diam. cake tin. Spread half the batter evenly on the bottom of the tin. Follow this with the layer of apple, and then the rest of the batter. Sprinkle with Crumbly Topping, and bake in a preheated oven (Mk 5/375°F/190°C) for about 35 minutes, or until done. Alternatively, bake in a 9"x5"x2.5" loaf tin for about 50 minutes.
Cool in the tin, and serve warm or cold with custard, cream, or icecream.
  • Thanks for that olliebeak will go that a go too
