    You can freeze the leftover wine in an ice cube tray.

    I don't know of a substitute but if it helps Asda are doing a special offer of 4 x 250ml bottles for £5.00.

  • Step One - Buy Bottle Of Wine

    Step Two - Add Req'd Qty of wine to dish

    Step Three - Enjoy Glass of Wine (or two) with Meal

    Step 4 - Optional - Buy Vacuvin Stopper and "save" wine for next time.

    The Vacuvin stopper sucks all the air out of the bottle and stops it from oxidising (going off) and will keep it fine for drinking or cooking for a couple of weeks at least. :T

    Most of hte suggestions I would have made have already been cited. However you can of course use grape juice - in effect unfermented wine. Most dishes just need a splash of wine so it wouldn't be missed. However, I do recommend another poster's suggestion of freezing leftovers in an icecube tray so that you can just add a little. That would help on the expense but obviously not if you don't like hte taste!
