Holiday advice please- Oct, AI

Hi i'm finding it a little overwhelming (and underwhelming to a certain extent) to find a holiday. Have seen cheapish deals through Travelzoo etc but when reading reviews there seems to be something that lets the offer down- whether it be the standard of the resort, or the location.
Dates to fly out 28th Sept to 1st Oct as need to be back for work for 8th / 9th- adults, 33 and 40
Any London airport- or reasonably easily accessible airport from the South i.e Birmingham/Bristol/Bournemouth
Sandy beach within a short walk- not really into pool scene
Good all inclusive package with a decent range of food and drinks
Option to "do things" off site i.e somewhere to walk to, or easily arranged excursions case weather is a bit variable
Budget around £500 each
Don't really mind where, just want decent weather/beach/value.
Have even considered Ameria for same budget as we could throw a little more in for spending money if necessary to cover food/drink
Any suggestions gratefully received!
