It was excellent. Even better than only letting it rise for a couple of hours during the day I think. From now on, all my bread will be done this way

I currently make about half my bread by hand but want to do more. I made gorgoeus bagels at the week that are left overnight in the fridge and the flavour is amazing. I know bread can be done like this but do I -
make the dough,
rise,
knock back,
shape and
put in the fridge to prove then
bake in the morning
OR
make the dough,
leave to rise in the fridge overnight
knock back in the morning
shape,
prove and
bake.
The first would be easier the second I think would have to be done as a batch at the weekendPeople seem not to see that their opinion of the world is also a confession of character.

Hi,
When I make bread overnight, I make the dough, then allow to rise overnight in the fridge.
Then in the morning, it's a 5 minute job to knock down andshape, then leave it to rise.
It's the initial slow rise in the fridge that makes the bread delicious!

Hi Rach
there is a thread - overnight bread which may offer some help and suggestion. Apparently letting it rise slower gives better results. I put mine in the fridge to rise overnight , then knock back shape , quick prove and cook.:D
Handmade bread may also offer some more handy hints and tips.
