Soak them in evaporated milk until they swell up, whizz in blender, add a thickener (I use kuzu but gelatine would work) for a creamy mousse.Debt free 4th April 2007.

I buy dried apricots for my little ones and they can only eat the squashy ones (me too really) so I have lots of hard ones left over.
Any ideas what I could do with them please ?

Depends how many you have. Poach them in juice to puff them up and serve a) cold at breakfast or b) hot for dessert with ice cream. Mini apricot crumble with stewed apricots baked under a crumble top. Add to biscuits or cakes, chop them finely and add to flapjacks.
Low GI and very healthy. Uses are endless.If you think reality makes sense, you're just not paying attention!0 -
Hi you could try soaking them in orange or apple juice - that makes them softer and more juicy, then eat them as is, or add to cereal or try adding some to a chicken casserole any type would do, but I really like a Moroccan chicken casserole with cinnamon and warm spices yummmm! They get swollen and juicy in the liquid and I am getting hungry now....lol

Melt some dark chocolate and dip the apricots in them. Leave to harden in the fridge.
Chop small and add to rice, chick pea and lamb dishes with cumin, coriander and cinnamon for a Middle Eastern flavour.0 -

i made a lemon flapjack thingy and it has chopped apricots in it. and it is lush. i'll pm u the recipe if u would like.
also i cook rice. and while cooking in a frying pan i fry onions , peppers , mushrooms , peas , sweetcorn . then once all cooked i drain rice and mix it all together then i add chopped apricots and flaked almonds. it is scrummy. ( hubby don't like it he picks out the apricots , so i get double.)0 -
