How can you quote part of a post

I have seen some posts where only part of another post has been quoted rather than all of the post. Very useful if you only one want to comment on a bit of a long quote.
How do you do it

I just click 'Quote' and when it appears in the reply box, delete the parts I don't want.
as long as you don't touch [ Quote] at the beginning and [ /Quote] at the end it'll work fine0 -
