Help please re delayed payment!

Hi all,
I sold five lots of single £10 vouchers on eBay that were scheduled to finish this morning with the only payment method as paypal so I could have the money in my bank (transferred from paypal) by about Tuesday next week.
Anyway this person has bid on three of them and won and has now emailed me and said their paypal account won't be up and running until Monday so is that OK or would I like a cheque.... I'm quite annoyed at this as I wanted the money in my bank account asap and I'm not willing to accept cheque as it's more time spent by me banking it and it's not particularly secure.
Do I have the right to file a non-payment thing (I'm not too knowledgable about eBay) against the winner?
While I was typing the above, the lady has emailed me saying she's ok with me relisting the vouchers and apologises for the inconvenience! What can I do now? Surely if I don't register a non-payment thing she can come back at some point with a payment and then complain that I wouldn't sell her the item!
Argh.... sorry this is a bit vague but if anyone could help I would really appreciate it!

buyers have 7 days to pay anyway, you dont have to pay the minute the auction finishes0

like razorbladekisses says you can do nothing for 7 days anyway, so you will need to be patient. Even if you transferred funds today from your paypal account they are unlikely to be in your bank account for Tuesday, I find my transfers take at least 5 working days so transferring today would mean I got payment next Thursday.
Tell the buyer you are happy to wait, then if she doesn't pay by next Wednesday, 7 days after auction end, start the NPB on her. Thanks for your quick replies guys, I may just play hell and insist this woman pays for it through paypal as I'm getting a very strong suspicion she's regretting bidding as she's offered to let me relist it very quickly...0 -
If you had set up immediate paymnt required by BIN then the auction would not have closed until buyer paid. if you had it as an auction plus the BIN, if someone placed a normal bid, the BIN option dissappears....and they have 7 days to pay.0

Yeah I remember seeing the instructions now.... I ticked the box but as it was a normal auction too, the BIN thing disappeared.
I'm so annoyed! Typical that I should try and get rid of something for a few extra pennies and now they're tied into something that could last a couple of weeks!

Oops you got struck by the double post!
I sold them all on BIN/auction format, not realising initially that BIN would disappear as soon as a bid was placed. I left it 3 days as I had put them on for a good BIN price; I thought someone would BIN straight away really. I had also selected immediate payment not realising that would also disappear....
I sold them in 5 auctions so people would be more likely to buy £10 worth of vouchers rather than £50...0 -
Your reasoning with the five lots was probably the right thing to do.
