A slight variation to Colcannon is a dish called Champ, which I made the other night. It would originally have been made with old potatoes but I needed to use up some new ones and DS won't eat them plain boiled :rolleyes:
Boiled a pan full of baby new spuds in their skins then mashed them down with plenty of butter, freshly ground pepper and a splash of milk, then chopped up a bunch of spring onions and stirred them. He thought it was wonderful and wolfed down two helpings"An Ye Harm None, Do What Ye Will"

I really do enjoy food and cooking and I'm forever experimenting and trying out new things, much to DS's dismay LOL! He's very tolerant though and will try most things although sometimes he begs for "normal" food :rotfl: ... I gave in last night and let him have burgers ... but they were HM
I think I missed my vocation in life and should have become a chef or something, although I guess having to do it isn't quite as rewarding! I did do a spell in a country pub kitchen once (when the kids were little and we needed extra pennies) and I really enjoyed it but I think long term it would have become boring sticking to a set menu and not creating your own dishes.
What I really do miss though is cooking for family and friends as I don't think DS fully appreciates my efforts much of the time :rolleyes:"An Ye Harm None, Do What Ye Will"
