Aren't you supposed to make it into a mound, make a hollow in the top and pour melted butter into the hollow then take forkfuls and dip into the butter.......oooh could just eat some now!!! :D

Lots of recipes from the NI Food and Drink website :-

I think there are probably loads of different variations for most of the dishes.

    First Post......so please don't bite

Clapshott is a delicious mix of mashed potatoes and mashed turnip or swede, piled into a mountain with a hollow in the middle with a little melted butter in and some chopped spring onion.......served with sausages or chops or chicken etc, can make a humble meal into a feast..........and a good way to disguise veggies to those who don't like to eat them.

I have made colcannon using black cabbage (cavolo nero), that cabbage with very long very dark leaves, I found it in the Farmers' Market, and it was lovelyyyy!!

My sprouted broccoli are flowering in the garden so I shall use some of the harder leaves chopped finely to make colcannon.

Thanks for giving me the idea, I had not made it for ages, now I know what we are having for dinner!

Sometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...

This is the best tasting brassica I have ever come across.

You can buy seeds from Seeds of Italy and grow your own now!
