What is your budget, during school holidays is always peak time but with the Olympics this year there are unlikely to be any bargains

You should have no problem doing it for £1200.

We have been going to Cyprus at that time of year for the last few years and never paid more than that for s/c including renting a 4x4 for the two weeks.

We've done late bookings with Olympic, a travel agent sorting out flight and accommodation (http://www.sunshine.co.uk/), and latterly diy.
