are paypal transaction instant? ie you sell a product using paypal so can send away product as soon as transaction has taken place knowing payment is successful?

yep paypal is instant, once you have paid and the seller has received the payment (if its very busy can take about 30 mins to show up) then in theory the seller should post out your item as soon as possible.

Obviously over this bank holiday weekend things are going to be a bit slower cos the post office isnt open that much.

if you were selling information via a website (e.g. genealogy records) rather than selling products then you could offer this premium information instantly after paypal transaction?

Yes, althopugh be aware that the buyer can apply for a chargeback (i.e. claim the payment back) for something like 30 days after the initial payment and it seems that Paypal often think the seller is guilty until they prove themselves innocent (e.g. if a buyer calims that an item has not been delivered, paypal usually need proof of delivery rather than proof of posting to side with the seller).
