Quick Veggie Recipies please

Hi
Can anyone suggest any quick veggie recipies, which could be eaten by a 1yr old too?
I only have max 20 mins after I come in from work at night to prepare a meal for two adults and one small child - unfortunately we are dictated to by the baby who has to eat a reasonable amount of time before he goes to bed! Preparing food is fine (within reason:rolleyes: ) and I would rather that everyone ate together (which doesnt happen too often at the moment).
I already do the pasta with veggies and tomato type thing, or mushroom risotto, but can anyone suggest anything else, maybe using lentils (or anything else for that matter??)

omlettes are quick. baked spuds in microwave. shepherds pie using lentils/other pulses but takes a while to bake. stir fry. chick pea burgers. gillian mckeith has some good veggie recipes which are pretty quick to make. soup can be fast- depends on type. a veg soup with litttle pasta bits (pastina?) is always good for kids

If I make lentil shepherds pie, could I make it and then heat it up when i want to use it (the next tea time?). I'll do a search for a recipe now!

Lasagna or potato layered with veg are both good made and cooked the night before and then reheated. If I was you I'd try to cook a night or two ahead if time permitted and then just reheat in the evening.
Baked potatos in the micro with beans, cheese etc also good. Pasta with pesto and green beans (leave out of freezer in morning). Eggy things like omlette, poached eggs, frittata might also be a possibility. Also coming into the better weather, three bean salad or other salads. Red lentil soup cooks pretty fast too but maybe you want something more dinner-ish. Might be worth investigating the microwave threads here too, not so hot at this myself but not under the same time constraints as you.
Also well worth thinking about a slow cooker. It must be really pressured trying to do it all in 20 mins with a hungry tired baby
HTH a bit. I've become a real fan of the sunday cookup myself - have just completed a huge veggie lasagna (12 portions, dinner for tomorrow and 10 in freezer), big pot of spinach soup for this weeks lunches, plus some scones. Managed to do the lasagna and scones in the oven alongside pizza for dinner tonight so energy efficient too! I am wondering how I ever did without meal planning - a lot of things on toast0 -
I love rose elliot's "vegetarian meals in minutes" isbn no. 0-00-414027-3. I've had a quick look and there is a fair amount of recipes that would be suitable for a littlie with some mashing/cutting up small.I'm going to feed our children non-organic food and with the money saved take them to the zoo - half man half biscuit 20080

Spinach & feta crownsare easy take a sheet of puff pastry defrosted
crumble a pack of feta
mince clove of garlic
mix in with some frozen spinach defrosted in microwave or hot water & drained & squeezed out
cut pastry into squares & pop on baking sheet
large blob of filling in the centr of each square & press the sides up a bit
put in 220 oven for about 15 mins

This is my all time quickie recipie. Put the kettle on to boil for rice and while that is heating up finely chop an onion and cook that in a saucepan until it is soft. Put the rice onto cook. Once the onion is soft add a drained can of chip peas and a can of chopped tomatoes. Heat it all through until nicely coated with the tomato mixture. You can choose which extra flavours to add at this stage I sometimes add curry powder, or just salt and pepper. Once the rice is cooked it is ready to eat.True wealth lies in contentment - not cash. Another quick good one is a adapted WW moroccan veg casserole
Chopped onion, pepper, mushrooms, courgette, leek etc
Tin of chopped toms
Tin of drained chickpeas
Teaspoon of cumin
Suatee off the veg, add chickpeas & toms, & cumin. Simmer for 20 mins

Dhals using red lentils are really quick and only take about 10-15 mins in microwave, serve with pitta bread. Takes not much longer on cooker top.
As this is obviously spicy, you might want to adapt using veg stock and herbs, adding veggies like possibly potatoes, courgettes, onion, mushrooms, spinach, cauliflour etc for the wee one. (You can always add some curry paste if you so desire once you have taken out enough for your toddler, and cook for another couple of mins).
Soya mince is also another quick cook and full of protein, make lasagne, spaghetti/pasta dishes, cottage pie, chilli con carne. Just so long as you put plenty of flavouring in!
What about doing a couple of trays of roasted veg....peppers, mushrooms, onions, courgettes and freezing in portions, so that you have that ready to fling into whatever you are cooking for extra taste. Risotto, casseroles, pasta dishes, quiche, or just serve in wraps with grated cheese.0 -
Definitely lasagna... I made a huge batch last night and had next doors in for dinner before we went to see Hot Fuss :rotfl:
I had a fair bit of veg that was getting past it's best so I decided to cook them (carrot, broccolli and cauliflower) - then once boiled I to the nicest looking bits and just chopped small and the rest got liquidised and mixed in with my tomato sauceOH HATES broccolli and cauliflower so unless cunningly disguised he won't eat it... but if he doesn't know it's in there he'll happily chomp away
Threw in some courgette too for good measure
The beauty is you can freeze lasagna and it's so easy to reheat in the microwave
Quiche is easy too. You could prebake the base the night before if you wanted and then just finish it off when you get home.
Slowcookers rule!!! Throw everything in when you leave in the morning and when you get home dinner will take less than 2 minuteseasy peasy!
