Freezing veggies - parsnips and cauliflower cheese

Hi all
I have just purchased a large bag of parnips from Tesco that I need to do something with today as they go out of date. I will cook some up to go with our roast today and would like to freeze the rest. I normally peel, par boil then roast my parsnips - has anyone frozen these before and at what point do you recommend freezing?
Also want to make up some cauliflower cheese - can I freeze this? Thanks in advance for any help you can give

I freeze cauliflower cheese often, either before putting in the oven or sometimes ready baked depending on how much time i have, both ways are fine,Parsnips I havnt frozen but i think you are doing it the right way,Member 1145 Sealed Pot Challenge No4

Ive froze parsnips before after peeling and leaving them to soak in water for 30 mins before freezing immediately. They defrosted fine.0

I buy big bags of parsnips and freeze them.
I cut as i would and par boil at this point i lay them on a baking tray and place in a freezer. That way they dont all stick together.
Once frozen i place in a freezer bag.
When needed i roast as i would just allowing a extra 5 mins.0
