Plenty of nice places to eat in The Cut which is a short walk away.

If you want a really nice breakfast, take a walk to Borough Market.

You're a very short walk from the Imperial War Museum.

The view from Lambeth Bridge is amazing and changes depending on the time of day. Try and cross it at different times of the day to be amazed by the view.

If you're around Westminster at lunch time on a weekday and want a nice really nice sandwich but not pay through the nose have a look at Strutton Ground (It's a road off Victoria St). It's jammed full of takeaways catering to the huge amount of office workers. As there is so much competition the food is good and cheap

Best and cheapest are seldom the same.

My recommendation would be a black cab -
    1. They are not as expensive as you might think, especially between 4
    2. It's the minimum of hassle
    3. It's part of the London experience
    4. The cabbies can be quite entertaining and have a mine of knowledge of the city

As you say it is just a stright forward 10-15 minute walk by the Thames to the London Eye from Lambeth Bridge. If you go on google maps and click on get directions tab at the top you can get directions from two points (click on the walking person tab to get walking directions). You can even zoom into Street view to do a virtual walk.

As the other susan mentioned it's a short walk along the Thames, if you're new to London, I would recommend you cross Lambeth Bridge turn left and then walk along the Northern bank of the river. This will take you past the Houses of Parliment and (Sort of) Westminster Abbey. You can then cross back over at Westminster Bridge which is nice route (Going along the southern bank will also give you a view of the houses of Parliment.

    Here's a useful map resource http://www.tfl.gov.uk/gettingaround/15101.aspx

To get to The Cut from where you are, you turn left just after the bridge into Hercules Road, straight over the traffic lights at the end of Hercules Road into Baylis Road (Lambeth North Tube Station will be on your right), walk along Bayliss Road and then straight over the lights into The Cut (You'll see The Old Vic Theatre on your right)
