We have two or three Rose Elliott books and they are very good. Perhaps we eat 'poncey' food but we do find them useful for standard daily meals.
The ones we use most of all though are the Moosewood range (based on recipes tried and tested in the Moosewood Restaurant in Ithaca, New York). They never fail and are amazingly tasty and straightforward. You might have to try mail order though as they're not easily available in the UK.0 -

Maybe we were just unlucky with the book that was given to us, but I remember looking through it and thinking that we would just not eat any of the meals. I have just looked up what the recepies were and the following are included :
- Pea, spinach and mint pithiviers
- Mimosa egg salad with tarragon
- Creamy fennel soup with gremolata
- Pavlova with pomegranate and grenadine
I can't even buy many of the ingredients to cook these dishes as no one sells them near me. I do admit that we much prefer good plain food so maybe it is just us?0 -

But there a good recipes in all the vege cook books already mentioned. I think over time I have been bought them as gifts.

We are not really vegetarian, but have been moving more and more towards eating veggie food rather than meat.
Years ago I had Rose Elliot Complete Vegetarian and I loved it, it really helped with learning the basics.
I got the new version and found it very boring and uninspiring... there was nothing that I saw and thought 'I want that!'
Nowadays I use the website BBC goodfood, and the variety is amazing, better than any cookbook I got. You can also save the recipes and can even use Calibre to make a PDF recipes book to give as a present.
I also use Springpad (ZipList will also work) to save all the recipes I find online and have them all in one place like a proper digital recipe book.
Not for everybody, and not exactly what you asked but thought I'd mention

In which case I'd swap the unavailable ingredient for something else similar or choose another recipe altogether. It honestly isn't that hard and experimenting is half the fun of cooking after all. Gawd knows, Rose Elliott herself suggests alternatives at the end of each recipe, if my memory serves.0 -

Not sure which one that was. I've got two, her ultimate vegetarian cookbook and her 30 minute meals one and have also looked at the recipes as I was perplexed by the comment they were poncey. These two are full of recipes for curries, chillis, pasta dishes, tarts and flans and lentil based dishes. We probably cook 3-4 recipes a week from them so for us they are everyday cookbooks and the ingredients aren't hard to get just from our normal supermarket.
That being said I've got Simon Rimmer's goats cheese cannelloni in the oven at the moment and am looking forward to it coming out
