Quick easy vegetarian cook book

Hi I would like any ideas on a easy veggie cookbook to treat my friend to, as she is thinking of trying to use less meat in her diet.Any ideas anyone .Something that she can use that's not too difficult in the way of cooking stuff as she has problems with her arthritis in her hands so cannot lift much in the way of pots and pans.She was told by her local nurse that changing her diet and using less meat would be beneficial to her.She hasn't got a great deal of spare cash so I thought I would treat her to a book but don't want to embarrass her by getting one thats expensive ,any thoughts ??? She is quite a bit housebound so the library isn't much good to her,or even some easy peasy recipes would be a help and I can collate them and print them off for her

    I'm vegetarian.. I have lots of books, but would recommend the Good Housekeeping step by step vegetarian cookbook as a basic one to start with.     There is a newer one, but I can't imagine there's that much difference

    If your friend has the internet, and is able to use the computer with her arthritis, then the BBC Good Food website has lots of good vegetarian recipes - you could always register and then print out a selection of veggie meals and create ina nice binder/recipe folder?

    When my DD lived at home I found Rose Elliot's books very good. There is one called Cheap and Easy (I think) that I used most of the time.

    When she left home she took it with her, but I have often seen them in CS and at boot sales.

  • Hi Jackie, I also like Rose Elliott, Sarah Brown is also worth a look, I have one of her books I use a lot called Vegetarian Kitchen, has a lot of the classic veggie recipes in there.

    I used to have the Sarah Brown book, and I've also got a couple of Rose Elliott books too. The veggie recipes from the 70s are all very wholemeal-y and brown looking - not at all inspiring. I'd be inclined to look for something a bit more modern. I've got rid of quite a few veggie cookery books over the past couple of years if they haven't got enough vegan recipes in them.
  • Hugh Fearnley Whittingstall's RIver Cottage Veg book is fantastic - not too many ingredients, lots of substitution ideas (e.g. if you haven't got spinach try cabbage instead) and really yummy recipes.

    It's a tenner from the Book People at the moment if I recall correctly.

    I want to start eating meat free, but my repetoire is rather limited! Can anyone recommend a good vegetarian cookbook? I would like to find one with vegetable and pulse recipes rather than soya/tofu. Any suggestions?

    Rose Elliot is fab. I recommend her Complete Vegetarian. Huge range of recipes and we have always had success. It's not dead cheap, but IMO worth it. We are not veggie, but don't eat a huge amount of meat and we find her dishes excellent.

    I like Rose Elliot too. We also have one called the accidental vegetarian by Simon Rimmer which is even better but has less recipes.
