the local market were selling boxes of mushrooms for £1 on wednesday, and they weren't at their best then! Used a few in a biriyani (that went a bit wrong) and still have loads left.
Suggestions please!
Filled pasta with creme fraiche tonight so a few will go in there, but not loads as when they're past it they tend to just discolour the sauce and make it all look grey!!!
Does anyone have a good mushroom soup recipe?
Many Thanks

Chop up/slice any that look fairly decent and firm, bag them up and pop in the freezer.
As for soup....chop, saute in butter with chopped onion, add chicken/veg stock, season to taste, simmer for 20-40 mins, add milk or cream to taste, blitz with a blender and eat with lots of crusty buttered bread.
Keep some of the sauteed shrooms to one side and add after you've blended if you want some chunky bits.Stone walls do not a prison make, nor iron bars a cage.0 -
Fry them up & add them to a gravy then freeze, use them in pie fillings ect.0

Put them in the bin! Not worth taking a risk if they're as bad as described." The greatest wealth is to live content with little."

Both of these recipes are good:

Cambodian Wedding Feast from HFW Veg book uses mushrooms and it is a really lovely meal.0
