Dallas/ El Paso/Lubbock

I am booked into the Hotel Indigo, downtown Dallas for a week in March. Please does anyone have any tips for good places to eat, things to do and things to watch out for around the Dallas area?
I am then moving on to El Paso staying at Quality Inn for about 12 days and again, please does anyone have any tips for good places to eat, things to do and things to watch out for.
Also am looking to fit in a few days in Lubbock to visit the Buddy Holly center and also get a tour of the Norman Petty Studios in Clovis New Mexico.
Any tips, help and advice would be most gratefully received.
