I haven't used a Samsung but on my HTC I have icons to turn on and off mobile and wifi data on my home screen, makes it very easy to ensure I'm not using the wrong one. You could also consider dowloading an app such as 3G Watchdog which monitors your data usage and allows you to set up an alert when you go over a certain amount, if you set the alert at a very low level it would tell you if you inadvertantly used 3G instead of wifi.0 -
I've had various 3 SIMs and swapped them around quite a bit. I've never had to do anything to the settings (although they have all been PAYG).
I don't think you need a micro sim for the Galaxy S2 so any PAYG 3 PAYG SIM would do.
Alternatively, if you have another PAYG SIM but not a "3" SIM pay "3" the £15 or so it costs to get the phone unlocked and use that SIM instead. Then you have the option of buying a local PAYG SIM if you find that is useful.
In some contries they are really easy to get (Spain for example), in others less economic.
I use a Vodafone PAYG SIM abroad with data off unless I need it. When I do use it it costs £2 for up to 25MB on that day in Europe.0 -
Not for everyone, but I use a BlackBerry on T-Mobile, and for £15/mth I have unlimited worldwide data, included tethering so that I can use it as a dongle on my laptop.0

is it to customers on a contract, or available to pay as you go ( pre pay)?
all i have found with T mobnile is this
