Bought a refurb computer with XP professional installed, how do I transfer the data from my old computer that has Windows 2000?

You'll need to reinstall programs. There are tools for backing up your email program and you'll need to use a memory stick or similar for transferring documents assuming you don't want to network the two computers.0

I would be worth getting an external hd + caddy then you can copy from wk2 to xp. That way you can always back up to external.0

Although it says it's for Vista it works with XP, not sure about 2000, check with Belkin.0 -
If you can have both the network together you can create a share and copy the data across without any expense. If you only have one screen and mouse you can set one up and leave just the power and network connected. If you google 'create a network share' there are alot of tutorials.
This advise assumes you are using a router.0 -
Much will depend on what data you want to copy, and what applications/programs you want to install on (not copy to) the new machine.
If you have apps on the old machine that you want on the new, you should be either installing them from their install discs, or downloading them again from whichever website you got them from originally.
For your data - word docs, spreadsheets, music files, pictures, etc., you could ;
Connect both machines to one router either by ethernet or wirelessly and set up shared folders on each machine, copy them from one to another.
Copy from the old machine onto CD, DVD, memory stick, external HDD, etc., then disconnect whichever you use from the old machine, plug into new machine, and copy to HDD from there0 -
Are we talking desktop computers? Are you scrapping the old machine? If so, remove the hard drive and add it as a second drive to your new one.
Copy the files directly from old drive to new then re-format the old drive and use it for future data storage.I'm dreaming of a white Christmas.
