Going to France - cheapest option

Right - I've never been abroad before so i'm trying to go to three countries this year,

I'm going on a course to Provence from 1st-6th April so have to have flights on those days, but as 31st March is a Saturday and Monday 9th April is a bank holdiay - i actually have 31st March to 9th April off from work....i have a vague idea of maybr trying to go to two or three cities in France during the in between time and stay in a cheap hotel....

Does anyone have any tips for someone not used to travelling on how to go aobut searching which cities to go to, best way of geeting about, finding the cheapest flights (as its Easter so everything i've looked at is quite expensive), finding cheap hotels, staying safe and anything else....
