    If you have a slow cooker how about a beef in red wine casserole for the meat eaters using lean beef

    I have no suggestions for the vegetarians – unless you have 2 slowcookers and do a similar casserole but use quorn (is that the meat substitute that you can chop up?) and add it in at the last minute so it doesn’t go to mush!

    I am making grilled tuna steak for my mum, we are having lemon+rosemary potatoes and veg with it..

    Then we are going to treat ourselfs to hot chocolate fudge cake mmm!

    I think I'd be tempted to do meatballs. Our faves are beef and chilli, or lamb and mint but you could easily do some veggie ones with quorn/tvp mince. Actually it wouldn;t be much extra work to do a variety. Easy to prep and only take 30 mins in the oven once you get there. Add a gravy or sauce of your choosing

    That sounds lovely but I'm not sure my nephews will like the beans. They're not particularly fussy, but a lot of kids don't like beans if I remember right from when I was a kid! I certainly didn't!

    Will add small children to my list of criteria!

    Recipe saved for myself though!

    I did think about pies but although I can use soya margarine to make pastry I don't think it would class as low fat.

    You could always do the 'catering' version. Cook the pastry lids separately so she can choose. Then you could make NICE pastry, with BUTTER (way better for you than marg) :D

    I'd use filo pastry, layered up properly it is more like puff but without the fat content
