I always do my coffee and walnut ones as individual ones by baking in a normal tin and using a normal round cutter and they come out great. (well i think so anyway!)

You could always buy a square/rectangular cutter, less waste then.0

why not make two large square cakes and cut out your rounds? then sandwich them? you will get some cake 'waste' but you could use that in trifle.0
