Mini Sandwich Cakes

I want to make some mini sandwich cakes and would love this tin from Lakeland but really can't justify £20 on a cake tin!!

Is there any other way I could make them? I thought about putting a circle of baking paper in the bottom of each hole on my muffin tin but then I'm guessing my cakes will be wider at the top than the bottom so won't look right.

Any ideas?

    bake them in washed out food tins

    look on ebay, there are 100's on there cheap

    Have looked on Ebay - no mini sandwich tins! Only muffin and cupcake tins which have sloped not straight sides.

    Food tins are too big - each cake should only be a couple of inches across.

  • I do mine in Yorkshire pudding tins- four 3" holes in the tray. Yes they do slope, but as each one is only about half an inch deep it doesn't matter a great deal.

    Or could you make a larger, flat cake and cut circles out of it with a glass or cutter? Then sandwich as planned.

    i was going to suggest making a bigger cake and using a cookie cutter too
    and you can use the excess to make rum balls or cake pops:D

    I was going to suggest exactly the same. Big one and cut rounds out of it.

    Silicon Moulds do one at £4.07 plus £2 delivery. I don't have that one but have found their moulds to be reliable and delivery is quick.
    I use a set of baking rings in 2 and 3 inch diameters but these make Lakeland look like the value option (lucky auction find from a bakery that closed)

    Either buy a decent shallow baking tray - like a traybake one - cook your mixture in it and use a VERY sharp circular cutter to cut out your individual cakes....

    or use regular or mini muffin tin and use a sharp cookie cutter to trim each cake of the excess ie have a cutter that's the same diameter as the base of the muffin.
