using up anchovies?!

I don't know about freezing them, but a couple of ideas for using them: chop a couple finely and add to a meat sauce (bolognese or similar) - you can't really taste them, but they add a lovely richness to the sauce. Or chop and stir-fry with some garlic and something green, like broccoli, as a side dish or to serve with pasta. They're supposed to be good with lamb, as well, although not being much of a lamb fan I've never tried it myself.Back after a very long break!0

I put unused anchovies into a little plastic pot and cover them with olive oil. I then stick the pot at the back of the fridge, the oil hardens and preserves the anchovies. I keep them for ages, a month or two even. I having been doing it for years without any problems or belly aches!£2019 in 2019 #44 - 864.06/20190
