My favourite easy and light meal is salmon with salad,

Take salmon fillets place on tin foil, add a knob of butter to each one, salt and black pepper squeeze of lemon juice, wrap in foil pop in the oven for about 20 mins at 180

Open a bag of salad add some dressing and serve with a nice brown bread or roll.

Hiya - i second those who suggested either lasagne with salad and bread etc (and then put the remainder in some tupperware for them to take home - new baby, not having to make meal tomorrow = yay!) OR the roast chicken with salad and baked potatoes etc

    mmmmmmm:D
Baldrick, does it have to be this way? Our valued friendship ending with me cutting you up into strips and telling the prince that you walked over a very sharp cattle grid in an extremely heavy hat?

Whatever you are making though the point about it being ok cold is pretty important. When they arrive baby might be unsettled, fussy hungry, needing changed so your food time might nominally be 1pm but could end up being 2pm. Also I'd be wary about spaghetti since food you can eat with one hand and very little concentration is usually good for new parents :) but normal pasta would probably be fine.

Personally I'd go with some kind of platter arrangement, that way if there are leftovers they could take some for the journey back. And it's a lot easier to eat if they're passing baby around. It puts less pressure on them to sit down and eat when the food is ready. Also leaves you free to not cook while they're there and to just enjoy their company :)

We've just had our neighbours for an informal lunch - curried parsnip soup, cheeses and nice bread, with Welsh cakes and coffee to finish.

They came at 1pm and left at 7.30. Forgot to mention the wine!

I know you said no pasta but actually I think thats a good idea. Everyone likes pasta and its cheap and easy. Make some pasta and put it i a big dish in the centre of the table so everyone can dig in. Make a salad and garlic bread too and some olives on the side. That way everyone can have as much or as little as they want. Oh I am hungry now..... !
thats what i would do too
The opposite of what you know...is also true
