Aviva’s flood map does NOT cover the area where our house is situated.

And that could very well be the issue as they may consider it a higher risk for that reason. Lack of information about an area increases it's risk. although I suspect it may be another reason which I will come to.
    in a population of 150,
So, it is not worth them wasting resources on the one or maybe two people that may use them.
that’s what gets my goat...that Aviva can be allowed to “add” false and illegal information onto their policies and charge these additional costs.

If you believe it is illegal then go down the police station now and report it. However, it is not illegal. It isnt even unlawful (which is probably what you really mean). They have every right to price risks as they decide.
BUT.....What in the hell has happened to loyalty from these companies????

It has followed consumer loyalty. It doesnt exist in either camp nowadays.

There is also the issue that insurers that dont want a certain type of customer will rarely come out and say so. They will put the price up high and use that as a deterrent. Based on what you have said, I am increasingly of the view that you are not in their target market and they have priced accordingly.

It affects the way some insurers will deal with a claim. I have dealt with several claims that were only covered because of the amount of time that the policyholder had been on cover for.
