The tomato Soup cake is absolutely delicious, especially if you add some plump sultanas.
Just made the Weetabix cake and a Banana tray bake yesterday, and apricot Yoghurt sultana cake - doubled all the quantities, and quickly cut them up, and froze them.0 -
Thanks for all your posts....I think I will have to try Kyle's Irn Bru recipe although the tomato soup one sounds very interesting! Will post again once I have tried it hopefully with pictures0

I am away from home for 2 days, but I will post them when I get back. I think the Apricot and Yoghurt one was from Quaker Oats, (as well as sunflower oil) as it had a lot of them in it ~ so quite healthy ~ but gorgeous. I have just been to the Quaker site, but can't find it again ~ Luckily I printed it out at home. The banana ones were from this site ~ 2 different ones. Just going to have a look now, and I'll edit this post when I find links.
Heres the banana ones ~ number 3 & number The second one doesn't have any fat in it. I didn't have enough stuff to double the quantities on the 2nd one, shame really, as it is really nice. Just gave some to my 20 month old twin grandchildren and they loved it.

Irn Bru Pound Cake
1 cake 1½ hours 10 min prep
4 eggs, beaten
1/2 cup shortening
3 cups sugar
1/2 cup butter
3 cups flour
1 teaspoon vanilla

6 ounces irn bru
Mix together first 4 ingredients
sift in flour
Blend in irn bru, vanilla and lemon extract
Bake at 180 for 1 hour and 10 minutes, Do not butter pan, Line with waxed paper.

What type of flour do you use, and do you just use lard type thing for shortening? I suppose with this you could do lots of variants on this - Limeade Cake, Tizer Cake, Vimto the list is endless.....:T

Going to try it at the weekend. Thinking of making a glaze/icing for the cake as well for a more 'irn bru' flavour. Will post again....and let you all know how it went.0
