Lemons & egg whites??

Bought 6 lemons last week, usually use them for zest for cakes but have realised i have 6 packets of dried egg whites sitting around. These were bought for my horsey for protein in his diet, unfortunately he is no longer here.

So was wondering if I could make something like lemon meringue pie?

Any ideas???

    About all I can see with that combination is Royal Icing. You need egg yolks for lemon meringue pie. You could make lemon curd & turn the egg whites into meringue nests & fill with the lemon curd & cream ;)

    Why not preserve the lemons in salt Moroccan style, they last forever that way and are delish in stews, salads, rice and cous cous. Use the whites to make meringues or a pavlova you can stash away for easter treats maybe.
