Alternative meat cut for Lamb Shank

Butchers, but do think seasonal. People often forget that about meat. On our farmers' market in about a month's time, they will not only be selling Spring Lamb
(expensive but lovely) but offering hoggett cheaply (old lamb, about to be mutton, very tasty)

I hate it when a celebrity chef uses a cheap cut of meat because it then becomes "trendy" and the prices shoot up! :mad:
