Fortune Cookies

Hi there I've searched our local town centre and supermarkets but cannot find chinese fortune cookies anywhere. Does anyone know how to make them?

    Hi,

    I haven't tried this recipe out yet but it sounds quite easy - it's from Annabel Karmel's Small Helpings book.

    Makes 16

    50g(2oz) sugar
    2 egg whites
    pinch of salt
    50g(2oz) butter
    1/4 tsp vanilla essence
    50g (2oz) plain flour

    Pre-heat oven 180c, write your messages on small strips of paper.
    Beat the sugar into the egg whites with a fork and add the salt.
    Melt the butter and stir into the eggs together with the vanilla, gradually beat in the flour until well blended.
    Drop teaspoons of batter onto greased baking sheets, making sure they are spaced well apart.
    Bake for about 5 mins or until edges are lightly golden.

    She says the skill is to work quickly and while the cookies are still hot and pliable. Place a fortune in the middle of each cookie, fold in half to make a semi-circle. Bend it again in the middle and weigh it down with a spoon or hold for a few seconds until it keeps its shape.

    Thanks honey, I have all the ingredients and so I'll give it a go tonight. Will let you know how they go.

    Unfortunately (actually I'm glad really) we don't have a Tesco in our town, just a Morrisons, Sainsbury's, Netto and my fav, Aldi. None of these had fortune cookies this weekend.

    Well I tried a recipe (sorry not your's honey) and thay have turned out OK. Not as crispy as the bought ones and they were quite awkward to fold.
    The recipe I googled and only had egg white, flour, sugar , salt and vanilla esence in it. I also got the fortune strips off a website here.
    I will try your recipe though to see if they come out crispier when cooled.
