ideas for dinner tonight please!

hello everyone, decided to cook oh a lovely dinner tonight, but as i've not been cooking a lot lately:eek:

i've lost all inspiration, and am at work so can't go trawling through pages and pages at the moment!

Any ideas for a tasty lowish in fat meal that's not chilli, spag boll or jacket potato's very much appreciated!!

    How about this (This is one of my own recipes):

    This is a great recipe to impress guests or for something different but tasty and low fat if you're on a diet.


    Serves 4:-

    Ingredients:-

    Spaghetti ( I normally allow 50-60g per person)
    2 small (or 1 large) lean gammon steak chopped (can be substituted for equivalent weight of quorn pieces instead or lean chicken)
    4 spring onions finely chopped
    1 vegetable stock cube
    350ml of skimmed milk
    2 heaped tbsp plain flour
    40g low fat grated cheese
    1 tsp french mustard (trust me on this even if you don't like mustard!)
    1 tsp chopped chives/chervil or parsley to serve

    Method:-

    In a large pan fill with boiling water and stir in stock cube until dissolved, add your spaghetti and cook for appropriate time according to packet instructions.
    In a separate pan 'dry fry' the gammon and spring onions on a medium heat. Keep them moving by stirring so they don't stick to the pan. Once they are cooked, add 4-5 tablespoons of the vegetable stock (from the pan where the spaghetti is cooking) and gradually stir in the flour to make a paste (turn the heat down to low for this). Then stir in the milk gradually and keep stirring so that you end up with a smooth sauc with your gammon and spring onions in. Now add the cheese and stir in, this will help thicken the sauce. Once the cheese has melted into the sauce add the mustard, this will give the sauce a very creamy taste without overpowering the sauce with a mustard taste (do not use english mustard as it will overpower the other tastes). Stir through again. Drain your spaghetti and serve, lastly topped by one of the herbs mentioned above.

    A portion of this contains roughly 450-500 calories (depending on the cheese you use this may vary) and under 5% fat.

    I'm making Jamie Oliver's risotto tonight for my OH (from Jamies' Italy). The recipe is here:

    I play around with the ingredients (adding mushrooms, spinach etc.). The addition of a glass of wine is good as the cook gets to have a glass of wine too as she/he cooks the meal :D:D:D Well in our house they do anyway :rotfl:

    It's not as complicated as it sounds ... you just have to stay with it.

    Edited: sorry it's not low fat (just noticed you wanted a low fat recipe!)

    I know you said no jacket spuds but I have this recipe also. If you need to know the fat content etc I can work it out as again its one of my own recipes but I have it marked as lower in fat.

    Garlic Crumb Pork

    Ingredients:-

    Pork chops or loins (1 per person)
    toasted breadcrumbs (allow one slice per person and cut crusts off after toasting the bread and whizz up in a blender to get breadcrumbs)
    Mixed Herbs (1 tsp per 2 people)
    Butter (1 tbsp per person)
    Garlic puree or crushed garlic (amount depends on your preference!)
    Ground Black Pepper (again amount depends on your preference)
    Grated cheese (optional)


    Method:-

    Heat your grill up on a high heat for around 15 minutes then put your Pork chops under the grill. Keep an eye on them. Once cooked on one side turn them over.
    While the Pork is cooking take a saucepan and add the butter and melt it over a low heat. Once its melted add the mixed herbs and the ground black pepper, stir through for around a minute. Now add the toasted breadcrumbs and stir again. Then add the garlic and stir thoroughly.
    Once your Pork is cooked on both sides, smear one side of the chop with the garlic mixture. Once all the chops are covered, if you wish you can add a little grated cheese to the top. Then place back under the grill for about 5 minutes, then serve. Best served with mash and vegetables or a jacket potato or cous cous.

  • Moroccan Chicken

    Chicken peices/breasts
    Lemon juice
    1 orange
    honey
    1 onion
    Hot chicken stock
    tumeric
    ground ginger

    Marinate the chicken with lemon juice, orange juice and honey for an hour.

    fry onion, add chicken and 2 tablespoons of the marinate. fry for 10 minutes

    Add in 1/2 pint of chicken stock, tsp tumeric and tsp ground ginger. simmer 14 minutes.

    the sauce will go quite sticky. i add more of the marinate towards the end of cooking. You can add orange segments in at the last minute.

    Serve with rice.

    hows about this then; take chicken breast cut a small pocket, stuff with soft cheese (philly light or laughing cow) and cover in a slice of bacon bake for 25 mins approx

    :rotfl: Nah, I submitted this to a magazine and got some great feedback. Most people said it took them between 20-25 minutes to make I'd said 30 mins in the article so they decided to tell me that my time estimate was too generous! One of the emails was from a guy cooking for the very first time to try and impress his first girlfriend (who was on a diet) and had been looking for an easy recipe.
