Pre making sandwiches

If I make up a few plates of sandwiches (they will be cut into 4 triangles - if this makes a difference) about 9pm and plate and cover with cling film will they dry out if they are not eaten till about 12pm the following day?

    Yes.

    Don't cut the sandwiches. Lay them flat on trays, completely cover with damp kitchen roll and then wrap tightly with cling film.

    They'll be perfect tomorrow (unless you've used white plastic bread ;)).

    problem is I need to cut them and have them all prepared as I have a funeral early morning. I might just have to get up super early and make them by 7am!!

    Make the sandwiches. Don't cut them. Stack them back in the bread wrappers, expel as much air as you can and tie tightly.

    Then when you come in, you can take off the wrappers and cut the whole stack into triangles at once. It won't take long to plate them, and at a funeral there's always somebody who will appreciate a practical way to be supportive.

    Whilst it REALLY limits your fillings you can freeze sandwiches - I do it for work I make them up on nice fresh bread and take them out the day i want to eat them and they are really fresh (Take them out first thing and they do defrost in a few hours.

    Mayo doesn't freeze, Egg doesn't and Salad's a no.

    But Grated cheddar and Pickle works really well, Ham, beef etc and Mustard, Peanut butter and Jelly (or jam - maybe a bit odd for a funeral but very america). Tuna with some barbeque ketchup in it is also nice - tried that one after I had it at a catered do.

    Maybe you could make up some and freeze them and that would reduce the fresh ones you need to make on the day ?

    In what way is it unhygienic? Environmental Health have no issue with it.
