You don't have to prove it per se, you just have to put forward a reasoned argument that you bought the car from a dealer and since then, no one has taken the dash off, certainly not yourself because you have no idea how to do such a thing and why would you have done it? So it must logically have been there all along.

You let probabilities and the judge do the rest for you.

Fortunately, the OP's car is a Fiat. If it had been a French car, of any make, made in the last 90 years or so, that would have really brought them out of the woodwork.
