Would you try one? Sealed tins of shortbread biscuits from m and s, best befor date pof august 2008.
He bought them, put them in his desk drawer and forgot about them.

I'd try them and see. Wouldn't eat them if they weren't crisp.

They smelt ok, we're not too uncrisp, but failed the nibble test.!

If I was you, I would try one with 2 options in mind:
A) If it had a rancid smell - chuck 'em on the compost heap. I wouldn't bother reviving them.If it had become too soft (yet the smell was ok) - flash bake them*. Put them on a baking tray or rack and put them in a hot oven (200 C/gm 8) for only 5 mins. Then take them out to cool. You'll them very soft to touch so be careful that they don't fall apart. Once cooled on a cooling rack, they would have regained their former glory!
I've done this a few times back in the day a student with bought shortbread from the open market (selected them from open bags, bought by weight, cheaper than the supermarkets at the time).
I'd take these home and flash bake them (without letting them turn brown) and seal them in a tin for later.
I've done this recently with some I bought reduced from the Co-op after Boxing Day 2011 - these were Christmas shaped and dusted in caster sugar. I got home and found them too soft. So I flash baked them and had 'em with a cuppa. Nice! :cool:
*Flash bake (rebaking) works well with uncoated bickies - without any extra chocolate stuff on top.
