hmm - green salad? potato salad? rice + whatever leftover or frozen veg? go on - give us a clue as to the ingredients you have available!

with rainbow trout I would stick to a simple green salad with a lovely lemon vinagrette. maybe a baked potato with sour cream and chive, or a pat of butter. NO hugely strong flavours as trout is delicately flavoured. but its YOUR trout and its up to you!
I also like roasted beetroot with fish - you can use the vacuum packed ones and just cut them in four and roast them off with a little olive oil and seasoning for about half to three quarters of an hour.0 -

i have friends coming round for dinner who eat fish but not meat..
(we cook lots of red meat usually as i have sheep and pigs)
so i am out of my comfort zone with fish..
I have stuffed trout - one stuffed with rice, red peppers etc and one stuffed with ricotta and spinach,
plus i have one dover sole...and i am sure there is another one in the freezer somewhere:o
I buy fish when reduced and shove in freezer BUT i don't know what to serve with it?
rice or potatoes? help i know nothing about fish...
can i just bake it all in the oven for 15 -20 minutes?
arggh i might just do a curry instead as fish scares me!
i was thinking moules mariner as a starter and for the kids, with lots of HM bread...

I serve the trout stuffed with spinach & ricotta with rice (sometimes cooked with a stock cube) green beans & sweetcorn. No complaints yet.Every day above ground is a good day.0

Yes, you can just bake it in the oven for 15-20 minutes.I would wrap them all in foil so that they almost steam in their own juices and add a knob of butter and a squeeze of lemon to the sole.
I like fish served with baby potatoes tossed in butter and a side salad or if you'd prefer to do veg then veg like brocolli and sugar snap peas or oven roasted veg are good.

serving fish is a bit more complicated than serving meat. fish varies in flavour - you can have a very mild tasting fish or stronger tasting fish. I like to balance flavour - so if my fish is very mild tasting Plaice or sole, I would probably serve stronger flavours with it. but, sort of limited to the dressing or sauce. To me fish is a light meal - I wouldnt serve Mash with it - but thats just me- I like to serve green salads with a nice vinaigrette or new potatoes with real butter. perhaps some lightly steamed veg like snow peas or pak choi? if I want something more substantial then I would do baked potato and a creamy sauce. with a green veg on the side (or salad).0
