Inadvertently granting neighbours right of access to garden?

If there is a gate that your neighbours uses - lock it once a year and they have to request access - this would reinforce your right of ownership.
Any way they can not assume adverse possession as the law on it changes a few years ago and can not do it retrospectively. they would have to lodge their interest in advance with HMLR, and if your address is correct with HMLR they would contact you.

No-one can take adverse possession of land if they've been given permission by the landowner so it is essential that you can prove that they have permission.
The idea of giving it for 364 days and not for a day a year is good. Again, document it.
