I usually cut in half and scoop out the seeds and then slice thinly, toss in olive oil, salt and pepper and add a crushed clove of garlic and roast for about 45 mins until soft. This also freezes well if you have too much.
If you like soup you could try the carrot and lentil soup in the recipe collection at the beginning of the thread.
Or how about this link for a spicy root and lentil casserole http://www.bbcgoodfood.com/recipes/1364/spicy-root-and-lentil-casserole
I have this recipe in the family meal planner and it is on my list to do.

Still open to debate IMHO - the gas cartridges aren't cheap but I guess it depends on whether you're going to use the flavours instead of buying "flavoured pop" or just use it for fizzy water (as I do) - and also how much you use it.
I could probably buy value sparkling water at the sm for around the same price as replacing the cartridges but I usually end up wasting a fair bit of these as they go flat so quickly and don't have that with the SS as just make them as I want them.... I didn't have the outlay of the machine either so not sure how much that would add to the cost. HTH:)Grocery Challenge £211/£455 (01/01-31/03)

Just adding a couple of spends one for £6 on eggs, milk and butter and the other a Costco spend on food of £53.28 getting me some potatoes, bananas, clementines, teabags, passata (£1.99 for 3 using a voucher) apple juice, orange juice, spread, marmite, tuna and pepper so all is right in our world.
New total is £139.31 leaving £60.69 for the rest of the month!
I made the orange cake and it was so easy that I will post it here:-
Whole Orange Cake
Free Recipe from Down to Earthby Rhonda Hetzel, Whole Orange Cake, page 294.
This isso easy to make and it’s full of flavour and orangeygoodness. It’s all mixed in the food processor too!
(Wash theorange thoroughly, particularly if it’s not organic or from your backyard.)
1 orange,washed and quartered
3 eggs
180 g butter, melted
1 cup white sugar
1 1/2 cups self-raising flour or 1 1/2 cups plain flour and 1 1/2 teaspoonsbaking powder
1. Preheat your oven to 180°C andgrease cake tin – I use a large loaf tin.
2. Put the orange quarters into thefood processor and process until they’re completely broken down and no largepieces remain.
3. Add the rest of the ingredientsand process again for about 30 seconds, or until everything is mixed together.
4. Scrape the batter into the tinand bake for around 40 minutes or until the cake is golden brown, and a skewerinserted in the centre comes out clean. Cool on a cake rack.

Hi lovely ladies,
Advice please! A friend kindly gave us a butternut squash last night. We don't know what to do with it but I thought roasted would be good to go with our cottage pie later. Any advice please on how best to roast it? Alternatively, any other suggestions for using it other than soup please?
Thanks,
Spigs
my old next door neighbour used to do a butternut squash and red pepper soup which is absolutely gorgeous, its a weightwatchers recipe but i couldnt find it when i wanted it!!! maybe one could be found on the internet?!?!0 -
Hi scotmumof3,
Don't forget you can add a good handful of lentils to every mince recipe to make it stretch further. Or you can make a veggie bolognaise replacing the mince with lentils.
Thanks everyone for the butternut squash suggestions. I was thinking more of how you roast it i.e. does it need parboiling, how long would you roast it for, etc?
Mind you seeing some of the recipes you've given I may just not use it today and make something nice and scrummy with it. Tracey your recipe sounds simlar to what we do with marrows and is very tasty. May just persuade OH to use it that way though the butternut squash and red pepper soup sounds delish. Can you tell I'm hungry!!!
Thanks again and see you all later,
