Hi all
I have treated myself to the new Hairy Bikers perfect pie book (£8 Amazon
) and am going to make the beef and ale pie.
However, the recipe is with a puff pastry top but I would like to do it in a shortcrust pastry.
There is another recipe for chicken, ham and leek pie in shortcrust pastry which just says to cool the mixture and then put in a pie dish lined with the uncooked shortcrust pastry and bake in the oven for 35 minutes.
The cooking time in the oven for the beef pie is the same time.
My question however is.. can I still just put the cooled beef mixture straight into the pie dish, on top of the base of uncooked shortcrust pastry (the same as the chicken pie) or should I blind bake the base first???
I cant see why the base wouldn't cook ok with the chicken filling and not the beef but its my first time cooking a pie!!
Thanks everyone as ever..

Why not just make a shortcrust top if you are worried ? that is what I would do as I don't like the bottom of pies anyway.
About 4 oz of flour
2 of butter or 1 of butter and 1 of lard
pinch of salt
cold water to bind
that should be enough for most pie plates and that way there is no soggy bottom..ohh err missessThere is a race of men that don't fit in; A race that can't stand still;
So they break the hearts of kith and kin, and roam the world at will.
