Did a cookery class years ago - was supposed to be "Italian Cookery" and I had hoped to discover authentic Italian food, but was most dissapointing as the teacher was a school home ecc teacher who I think had never sampled real Italian food in her life and seemed to think that everyone used convenience foods as building blocks.

Rant over - that said one of the recipes she gave did turn out well, she used tinned chicken in white sauce to stuff dry cannelloni tubes then covered them in a cheese sauce and topped with grated cheese.

Now personally I would be unlikely these days to use tinned chicken in white sauce - but - leftover chicken in a white sauce I could certainly do, just a suggestion.
