the lorainne pascale (home cooking made easy?) has quite a few good bread recipes in it. including one for cheese ham and chive bread. it doesn't have any yeast so it doesn't have to rise. it's almost like a soda bread, perfect with soup0

Use razor blades and a stirrer from a coffee shop to mount it on.
I have tried both methods over the last five years, and failing to slash the bread never results in the bread failing to rise or expand. You can however make the bread collapse if you slash it after the second proving, particularly with a slightly wet mix (they tend to rise better and more quickly). As for a good crust, that is something which I never have a problem with, in fact I can never get a softer bread even when I try.
If you are going to slash the bread, an ordinary knife will not do, you have to use a razor blade (or craft knife/scalpel) as Sambucus suggests.0 -

my first attempt at making bread was rolls, they were like mini cannonballs, no-one could even eat one never mind two :rotfl:0
