We're thinking of using this to book a 2 night stay at the Signature @ MGM as it's a lot cheaper than booking with the hotel.

I've used vrbo before with great success.
Basically, for the Signature, people have bought a suite and are now renting that suite out by themselves.
The reason its cheaper than booking with the hotel is because you are in essence staying in someones home (just like renting a villa).
As long as the person appears ok, it should be ok.0 -

I've also used them for villas in Florida and all have been great!! Make sure you see photos of the exact apartment/villa that available.0
