I can't edit my signature anymore... whatever I do (even when I tried to delete it all) it just says at the top 'BB code value too big'
Can anyone tell me what I'm doing wrong, or how to make it work again?

It usually best to remove all the formatting/colours from your signature, so you can start again.
The formatting adds extra BBCode, which seems to be what it's complaining about.
Highlight the whole signature in the edit box and click the
button in the top left. Should remove the formatting. Or copy your signature to notepad (text editor) then copy back to get plain text.
Then you can gradually add back in some colours/formatting. The forum will tell you when you try to save if you've added more than you are allowed.Free/impartial debt advice: National Debtline | StepChange Debt Charity | Find your local CAB

I recommend trying what fermi and meher just suggested in the first instance. If you still have no luck return your signature to a simple plain text signature, which will save without problems. You can then make small incremental changes - saving after each change. This will reveal which change is making vBulletin unhappy. So that you can work around it.
