  • 500g chicken
  • plenty pasta twists
  • tinned tomatoes
  • tomato puree
  • selection of herbs
  • kidney beans
  • mung beans /pinto beans / black eye beas - I can soak some tonight to help bulk out meal
  • boullion powder
  • choice of stock (beef, chicken, veg)
  • plenty cheese
What we don't use, I fully intend to freeze.

Can't use oven as the door is b*!*!*!d.

With that I'd do spicy chicken, assuming you have a few spices.

Gently fry off a chopped onions, and then add the chicken cut into chucks for a few minutes, then add a shake of ground cumin, ground corriander; chilli powder ( i say a shake because I never weigh out spices, but it is up to you how much you add), and if you have it a crushed garlic clove.

When the chicken has gone a golden brown colour on all sides, add the tinned tomatoes and a squeeze of tomato puree, and cook through for about 20 minutes.

    Serve with pasta.

This is one of our favourites as it is a lovely mix of spices and not too hot. We often use cooked sausages as well instead of chicken and it is delicious with pasta and garlic bread.

Stovetop or slow cooker mixed bean chilli. You could add in any leftover chicken and serve it in tacos or enchiladas etc.

You could try a modified version of this... Recipe - Chicken Pasta Alfredo

Or do a pasta "bake" by cooking the various bits separately on the stove top (and/or microwave) and then assemble it and finally put it under the grill to brown the top. Chicken Pasta Bake Which might also amaze your family... a "bake" with no oven :) Bakes like this will accept all your ingredients too - basically a rich casserole with a topping :)
