What if a trustee dies?

I was just wondering what happens if a trustee dies? Is it just a case of getting another one or does something 'legal' have to be done?

the legal part is notifying the Charity Commission, and Companies House if you're a Limited Company (many charities are, in order to limit liability).
But yes, in essence you need to replace them in line with your constitution, so that you stay legal. In some situations it wouldn't have to happen immediately, for example if your governing document says you'll appoint 4-6 Trustees, or 'at least' X trustees, then you can carry on with one down for a while.
And you can co-opt rather than holding an election or an Emergency General Meeting.
Well, I say you can, you probably need to check what your governing document says ...Signature removed for peace of mind0
