Not sure how useful this will be but its my favourite vegetarian recipe and hides leeks quite well in the food.
Pesto Rice Cake
1 large leek
350g risotto rice
1l vegetable stock
100g green pesto
2 eggs
150g mozzarella
Fry the leeks and then add the rice. Add stock until looks like risotto. Add pesto and eggs. Spoon half into 23cm pan. Arrange mozzarella on top and then add remaining mixture. Cook for 4 minutes. Grill the top until golden.
The risotto comes out as a cake thing with the mozzarella in the middle. Mmm I want some now0
