Making lumps of meat look bigger...

    have you considered meatloaf? I make mine with 250g mince, 1 finely chopped onion, 6 standard 85% meat sausages or 10 chipolatas (again got to be high meat) 2 slices of bread worth of bread crumbs and one of the boxes of asda smartprice stuffing mix which has been made up with boiling water and left to cool.
    mix everything and add an egg. mix some more, plonk into a greased loaf tin (or cake tin, whatever) and bake at 180 deg C until it's shrunken away from the sides of the tin a bit. it takes about an hour ish to cook it, but half an hour in, pull out the tin and pour any liquid accumulated into a jug. you can then skim any fat off this later and add it to gravy ;)

    this makes enough for 2 adults and 1 hungry child for a dinner, plus leftovers for sarnies. it's also nice the next day in chunks with a plain tomato and herb sauce over pasta.

    take to table in a lump, but serve in slices

    We need to cut down our meat consumption - both for economy and because we are both getting far too lardy. trouble is OH is a real 'lump of meat' man, will eat mince and cubes in rissotos etc once a week or so, but if I start doing them too often he grumbles.(not seriously, but I like to keep him happy...). He prefers, to have a visually 'big' single piece of meat.

    How bout you both go vegetarian and the 'OH' learns how to DEAL with it...

    The OPs OH sounds exactly the kind of person who wouldn't miss meat judging by what I read.

  • I totally understand, my hubby is a meat and 2 meats man too:) I managed to get round the ridiculous price of steak etc by waiting until the supermarkets are selling their roasts cheap, Morrisons did a half price on beef recently, so you pay £12 for a roast, and then I cut it into steaks, as thick/thin as I need, separate them into packets and freeze them. The last one I bought got me 16 huge pieces of meat, and it tastes just as good as the rump etc, and just as tender. That way you save pennies and your hubby gets a nice big slab of meat:)

    More bones - but full of flavour:
    Lamb shanks or lamb knuckles
    Pheasant
    Turkey drumsticks

    Splitting pork chops and making a HM stuffing

    Stuffed pork fillet

    Splitting chicken breasts and stuffing with goats cheese or tomatoes

    Wrapping chicken breasts in parma ham

    Fish steaks such as Tuna

    Fish cakes

    Smaller steak and bigger jacket potato
  • Another one with a lot of bone in is oxtail - a good oxtail stew can tast pretty good, and you can give him at least three pieces before it's too much. And it takes longer to eat than some other meats, so that's another mental indicator that there's a lot there. Not sure how fatty they are, but a portion of it should melt, and you can separate that out. Sounds like you can't use the traditional method of bulking up stews and include dumplings, though. But if you do, seriously make sure they've got real suet in. Otherwise they just taste bad.
    And someone said Quorn tastes like chicken... really, have you never tried chicken?
