OMG Life's Horizons do Broaden at 40. Lol

I had a bunch of bananas that were threatening to go off.

Usually, I put them in the compost bin. I didn't fancy them fried or baked.
Decided to google, and there was the following recipe suggestion:

Peel them and cut them into inch long segments
Freeze
Blend, maybe with a touch of honey and vanilla

I took a scoop, added a tablespoon of Baileys and HEAVEN.
Ye gods, all these years, and I've been consigning them to the compost heap!

Strangely, it has the consistency of rich ice cream, with no stringiness or crumbliness.

    I usually make them into banana walnut bread when they are that far gone, but that sounds yummy.
    It's not easy having a good time. Even smiling makes my face ache.

    That's a thought. Walnut pieces, crumbled on top. Or blended in just before serving. Mmmmmh.

    Wish I'd discovered this in the summer. Got rather cold after my serving of banana ice cream. Lol.
  • I was just looking up some virtuous banana bread recipes suitable for my 10 month old (so very little or no sugar), but this sounds a much better way to use up bananas..... Don't have Baileys...maybe something else will do????? Have a rather random selection of alcohol...
    (LO will have to have something else!)

    Oh I do hope you're right! I'm 40 tomorrow and could do with some broader horizons LOL!

    Will try the banana thing next time I've got some.

    Spaghetti Monster, I've just spoken to a friend, and she blends in brandy cream with hers. I would suggest that you make up a batch of plain banana, and then do a tasting session - one teaspoon of banana with a dab of each of your alcohol collection!
  • Actuellement I suspect the alcohol blended with the nana would end up with a softer consistency as it won't freeze rock-solid. Gawd, I wish I had a freezer now.

    omg, i cant wait until im 40 so i can try this!!!!

    is it like alcohol? its against the law to consume until you reach a certain age
  • i always use my old bananas when i make flapjacks... it keeps them moist... they are lovely..
    sunflower spread and honey melted,, take off stove add mushed up banana and oats and bake for about 12-15 mins.... oven 160....

    i have never made ice cream but it sounds lovely

    Frozen bananas are gorgeous. You can make really lovely lollies by blending bananas with some soy milk and almond butter, then freezing it - I was taught this by a vegan friend who had this instead of dairy ice cream. They're also nice if you blend them with cream and maple syrup :) You can also make great lollies for kids by cutting the bananas in half and sticking a lolly stick in them - when they're frozen it's a great way to make children (and grown ups) eat fruit. If you want to be naughty you can also dip them in chocolate and sprinkles, or chopped nuts.
