If it's a good flavouring for a stew I always add a bay leaf :-)

I made up a batch of this dry spice mix/rub just before Christmas, kept some myself and put the rest into little jars to add to my Christmas hampers. It's suitable for meat, fish and vegetables and is especially good for barbecuing.
6 cardomom pods
2 tsp black peppercorns
4 tsp cumin seeds
4 tsp coriander seeds
4 tsp fennel seeds
1 tsp crushed dried red chilli flakes
2 tsp oregano
1 tsp paprika
2 tsp seasalt
1 rounded tsp dry mustard powder
3-4tsp caster sugar.
Lightly bruise the cardomom pods, remove and discard the green outer husks and put the black seeds into a dry frying pan. Add the peppercorns, cumin, coriander and fennel seeds. Toast in the dry pan over a low heat for 2-3minutes until they start to brown slightly.
Tip the toasted seeds into a mortar, add the chilli flakes and grind finely with a pestle. Add the remaining ingredients and mix.

For stews and casseroles I tend now to stick to my 'tried & tested' mixture of:
Salt
Pepper
Turmeric
Cumin
Coriander
Galangal
Mace
Paprika
Methi seeds
I'm not sure if it's similar to any ready-made spice mixes - I've just tried mixing different flavours together and seeing what I like best. I never use much of each, so it's not overpoweringly spicy, but gives a warm and earthy flavour/feeling.
I also use these spices a lot, separately, in other dishes, so in my opinion it's good value and better than buying any pre-made mixes.0 -
